Crispy arugula on a warm and gooey open-faced sandwich?
Um…yes please! This is so easy and fun to make!
Did you know arugula got crispy when you bake it in the oven? Well, it does, and it is life-changing!
Ingredients (makes 2 pieces):
1 handful arugula
2 slices sourdough toast, or whatever you have on hand
2-3 tablespoons of plain cream cheese
1-2 tablespoons of hot pepper jelly or zucchini relish (recipe coming soon, it’s sooooo good!)
Oil, salt, pepper, and crushed red pepper flakes
Instructions
Toss 1 handful of arugula with a small drizzle of olive oil, salt, and pepper, Lay leaves out flat on a lined baking sheet and bake at 350F for 8-10 minutes, or until golden.
Mix 2-3 tablespoons of plain cream cheese with 1-2 tablespoons of hot pepper jelly or Zucchini Relish (recipe coming soon!), a pinch of crushed red pepper.
Spread cream cheese mixture onto two pieces of toast (I LOVE sourdough). Make in the oven for 5-7 minutes or until warm.
Top sandwich pieces with crispy arugula and eat hot!
