Roasted Red Pepper Pasta

Ingredients (Yield: 2 servings)

1 and 1/2 cup of medium-sized, uncooked pasta

3/4 cup of any red pasta sauce

1 red bell pepper

Spices! I used salt, pepper, basil, and garlic and onion powder

Instructions

Step 0.5: Preheat your oven to 450F. Line a cookie sheet or some kind of baking pan with aluminum foil.

Step 1: Slice your red bell pepper in half and remove the seeds. Lay your pepper halves cut side down on your baking sheet. Bake for 20-25 minutes, or until the skins are shriveled and quite brown/black.

Step 2: Cook your pasta according to package directions.

Step 3: Allow peppers to cool for a few minutes, then carefully peel the skins off of your peppers. If you roasted your peppers for long enough, the skins should be sort of paper-y and come off easily.

Step 4: Blend roasted red peppers and your pasta sauce in a blender until smooth. 

Step 5: Place your blended sauce into a pan and heat until just bubbling. Add spices to taste. 

Step 6: Pour the sauce over your cooked pasta and serve hot!
