Tomato Pie

Ingredients (Yield 4-6 servings)

1 pre-made roll of pie dough

2 tomatoes. Heirloom tomatoes would be amazing, but any fresh variety you can find.

½ of a white or yellow onion, sliced

¾ cup of plain greek yogurt

¾ cup of shredded sharp cheddar cheese

Salt & pepper

Seasonings (I used salt-free all-purpose and dried basil)

Instructions

Step 0.5: Preheat your oven to 375F. Bake your pie crust in a pie-tin for 8-10 minutes, or until set but not browned.

Step 1: While your pie crust is baking, slice your tomatoes thinly and dice your onion.

Step 2: Mix your greek yogurt with the shredded cheese and spices and set it aside.

Step 3: Layer your tomato and onion slices in your pie dish.

Step 4: Scoop your greek yogurt mixture on top of the tomatoes and spread it around gently until the surface of the pie is covered. 

Step 5: Bake your pie at 375F for 40-45 minutes. If your pie crust starts to get a little too brown, you can loosely cover the edges with foil. 

Step 6: Let your pie cool for 10 minutes, and then serve still hot!
